A Meal Cooked By Someone Else

As much as I love (adore!) cooking, sometimes the best thing in the world is a meal cooked by someone else.  Rachel cooked dinner for a group of us tonight and it was unbelievable.

Since I didn’t make the dinner, I can’t really give you a recipe.  But I can give you an idea, which, in cooking, generally goes a long way.  The main dish was a shrimp risotto with spring vegetables.  The risotto was made in a somewhat traditional way, but Rachel explained that instead of sauteing onions and garlic to start, she sautéed fennel and leeks.  The fennel and leeks were soft and sweet.  Lovely base for the risotto.  She then added rice, wine and stock in rounds, as you would with any risotto.While the risotto was cooking, Rachel blanched some asparagus and prepared some frozen peas to add to the cooking rice.Just before the risotto was done, Rachel added a couple of tablespoons of lemon zest and – here’s the amazing part – a cup or so of a mascarpone cheese and fresh squeezed lemon juice mixture (about a cup of mascarpone and the juice of one lemon, whisked together).  This gave the risotto a delicious creamy, tangy taste.Next, Rachel spread some shrimp out onto a pan, lightly seasoned them, baked (!) them in the oven at 400 degrees for 6 minutes and they were done.  Most clever way to cook shrimp ever!  She topped the risotto with the shrimp, some freshly chopped chives and a cup or so of Parmesan cheese.  This is, without a doubt, one of my favorite home cooked meals I’ve had in a long time.  Thanks, Rach!

For dessert, Heba brought a strawberry rhubarb pie.  And vanilla ice cream.  Fantastic, obviously.Everyone, including Gabe, was happy (though you can’t really tell by this sleepy little face).Love him!

    That looks soooo good! I want to eat the shrimp! Also, did Heba ever get the hair product out of Gabe’s curls?
