Bagels And Lox On Drugs

Seriously.  You are not going to believe how amazing this open-faced sandwich is until you make it.  Abe and I had one at the farmer’s market in San Francisco at Cap’n Mike’s and remade it two days later.  There is a version with lox and one without if you don’t care for lox – both are to die for.  Please make this.  You will be so happy.

Cap’n Mike’s Special Sandwich

Ingredients:

4 slices of good quality sourdough bread (Cap’n Mike’s uses Acme Bread Co.)

Whipped cream cheese (enough to spread as much as you like on each slice of bread)

4-8 slices of lox (for a vegetarian sandwich, replace the lox with thin slices of golden beets)

8-12 slices of ripe plum tomatoes

12 slices of lemon (these should be very thinly sliced (1/16 of an inch or smaller, if possible), all seeds removed)

Capers

Walnuts

1/3 cup thinly shaved red onion (optional)

Lavender salt (if you cannot find lavender salt, grind 3 parts salt to 1 part lavender by hand in a mortar and pestel)

Directions:

Spread cream cheese on bread.  Layer lox (or beets), tomatoes, lemon slices, capers, walnuts, and shaved onion (if using).  Lightly sprinkle lavender salt over the top. 

Ah-choo.
