Avocado Beauty

I love preparing avocados this way.  It looks so beautiful, to follow the natural shape of the avocado, and the pit.  Slice an avocado in half.  Remove the pit.  Place the avocado halves face down.  Make half-inch horizontal slices, leaving the skin in place.  Separate the slices and remove the skin.  Plate over a bed of spinach with a drizzle of good quality olive oil, fresh lemon juice, salt, and pepper.  Clean, delicious food.Before you throw out the lemon, use it to clean the sink.  It’s a natural disinfectant and will make your kitchen smell nice!

    Diz- I love this and I’ve been meaning to try this dish I saw a contestant prepare on top chef where he thickly sliced the avocado in the manner you described, and poured and egg into the hole. He cooked it in a frying pan and topped with crab, I think? It looked delicious and beautiful.
