Grilled Cheese Four Ways – Part II

John was right – I forgot to mention Abe’s clever title for this grilled cheese delight.  “It will kiss you . . . and then slap you in the face.”  Sad but true.

OK so onto cousin Nate’s third place grilled cheese sandwich, the “Bienvenido a South of the Border.”  Also aptly named.  Nate learned Spanglish in Texas.  This grilled cheese brought depth of flavor – and a festive tone.  The pepper confetti in each bite was a judge favorite.  I like the thematic nature of this sandwich.  Nice salt and spice going on, too.  Finally, as a California girl, anything reminiscent of Mexican food (even in the form of a grilled cheese sandwich) works for me.

Nate’s Grilled Cheese


Multi-grain whole wheat bread;

Roasted pepper cheese;

Sharp cheddar;

Fresh jalapeno peppers, diced (add to taste);

Fresh Anaheim peppers, diced (add to taste);



Layer cheese and peppers on bread.  Butter bread.  Heat pan.  Grill sandwiches on medium-high.  Cook until cheese is melted and bread is golden brown and crispy.  Que Padre!

    Probably the best grilled cheese. Should have been first place 🙂
