Kate’s Magic Pancake

If I said we had guests in town every weekend of the year I would be exaggerating, but only slightly.  Often, when we do have guests in town, we make brunch at home.

When we were in Austin a few weeks ago, Kate made this amazing fluffy pancake (a family recipe) that I decided is now my go-to for any brunch at home.  For those of you who have followed this blog from the beginning, you know I’m not really a baker and I tend not to follow recipes.  But this one is easy, super quick, and feeds a bunch of people all at once (the hardest part about serving breakfast or brunch is keeping everything warm – not a problem with this magical pancake).

Kate’s Magic Fluffy Pancake (No idea what Kate actually calls it!)

Preheat oven to 400.

Melt some butter (Kate uses half a stick – I went with about a quarter stick) in a ten inch skillet.

In the meantime, in a blender, combine half a cup of flour, half a cup of milk, a quarter teaspoon of salt, and four eggs.  Blend.

Pour mix into skillet.  Cook until bottom starts to get hard but the top is still moist.  Run a spatula around the edge to loosen the bottom from the pan.  Use a knife to make an X across the top of the pancake (don’t cut all the way through).

Bake for 10-15 minutes, until top browns and puffs out.

While the pancake is baking, core four apples.  Slice in rounds or traditional slices.  Cook in a pan with a touch of butter, sugar, and cinnamon, until soft.  

Take the pancake out of the oven.  Top with apples and serve with syrup.  Serves 4-5.  Chicken apple sausage makes a great side.
